All in the nose

Then comes the time when the cellar master will blend several indeed sometimes up to a hundred or more - eaux-de-vie of different origins and ages.

It is a moment of inspiration based on the memory of the cellar master's nose.

The eaux-de-vie used here must come from one of the six authorised areas or crus : Grande Champagne, Petite Champagne, Borderies, Fins Bois, Bons Bois and Bois Ordinaires.

Paradise

Certain eaux-de-vie, when they are fully developed, are taken off to paradise.
There they lie in demijohns, sometimes for over a century.
